I was in an experimental popsicle mood the
other day, so I decided to challenge myself to come up with a unique
popsicle recipe. I had a can of pineapple chunks and I had (and still
have!) my mountain of chocolates.
The result? Dark Chocolate Pineapple Popsicles! Is it just me or is that a little bit of a tongue twister? Eh, it’s probably just me.
It’s no secret I’m a huge fan of super
quick and easy recipes. The only thing better than this would be if my
food ideas would magically appear in front of me, already made! Still,
I do enjoy my kitchen time. I just don’t get a lot of it, so my number
one goal is to find something fun and delicious to make and, as Larry
the Cable Guy says, “Get ‘er done!”
Let’s make some Dark Chocolate Pineapple Popsicles.
All you need are some Dixie cups, popsicles sticks and…
some melted dark chocolate to “brush” onto
the bottom and sides of the Dixie cups. Make sure to apply a somewhat
thick layer that covered lines the inside of the cup completely.
Otherwise, the pineapple innards will leak when you remove them from
their cups.
Next, set the chocolate-lined cups in the ‘fridge to set up for five minutes or so.
Now for the pineapple popsicle innards.
Grind up a can of pineapple chucks in a blender. The chucks are pretty
fibrous, so the longer you can grind it, the better.

Pour the ground up pineapple into each
Dixie cup, filing to the top. Insert popsicle sticka into each cup and
set in the freezer for three to four hours, or until set.
Next, remove the paper cups by tearing at the top of the cup’s seam. The rest should peel off fairly easily.
Lookin’ good! Actually, if you look
closely at the very top-left edge you will see a small amount of the
pineapple juice seeping out. If you coat the inside of the cups a
couple of times, you shouldn’t see this. I obviously didn’t use enough
chocolate in that spot. Ack!

in the summer months for sure!
